Directions

Preheat oven to 390 degrees F.

In a baking dish, combine the sausage slices with xylitol, olive oil, black pepper, onion, bell peppers, salt, capers, red wine, mushrooms, oregano and a ½ cup of water.

Toss well to ensure everything is coated, set in the oven and bake for 1 hour.

Storing

Divide the salad between 6 airtight containers and put in the fridge. You can use them for up to 3 days. To freeze, transfer to Ziploc bags and freeze up to 3 months. Defrost in the microwave for a few minutes.
